Everyone wishes that, I'm sure, but...that's what fanart is for. And we had bits and pieces of that Mai. She was wryly playful on the ship in 301, going all gushy in 302...a little more sulky in 305, but that was kind of the problem addressed in that episode...309, she was actually giggling, but by the first commercial break, Zuko was into Sulk Mode, and you just can't be cheerful when there's a Sulk Mode Zuko in the same room.
As for Boiling Rock, well...her boyfriend's run off to play for the other team (in a more dramatic sense than the usual figurative one...), her parents are trapped in a city and counting down the days until they're flash-fried, and she's once again stuck sitting at home alone while everyone else goes running around taking care of things for her. She's not going to be happy.
Finale...she's cheerful and humorous, and even laughing at Toph's jokes along with everyone else.
Not as many opportunities for her to get all happy-face on them.

True, true! I know the conditions surrounding her didn't really call for a more playful Mai, but I missed it nonetheless. Haha, definitely. I make it a point to draw her happy in my fanart.
