Star Chime in particular is replicating her mother Luna's famous angy face . Which, let's not lie, is absolutely an in-universe meme here in this modern day of Equestria. Luna doesn't understand the appeal and still feels some embarrassment over the old photo. Star sympathizes with her mother.
Amadeus thinks it's hilarious and delightful, but would never admit it to her face. It's purely due to his reassurance that the joke is out of adoration and good fun that Luna even tolerates it.
