A charlotte is basically any mousse or bavarian cream which is somehow partially or entirely wrapped with cake. My favorite is a Charlotte Royal (the one in the picture) which is a Bavarian with some kind of jelly roll of some sort on the outside. Traditionally it is made with either a vanilla or citrus bavarian.
