One day I'll have to go back through your gallery and do some practice with these tutorials of yours, they seem to be very valuable in breaking down the different layers while still requiring the viewer to think about it themselves (which to me is a very important part of learning- typical "learn to draw" books where they tell you where to place circles and how to connect the dots are a good start, but it's very easy to just copy without reflection, and then not much learning is happening I think, at least not for me).

I have to agree with you, those step-by-step "draw circles" tutorials do nothing for me. They can help you copy a drawing, but not to draw freely and spontaneously. Ironically I was commissioned to create those types of animal drawing tutorials for a book last year (The Sketch Encyclopedia). The reviews and customer feedback for that book has been so positive, I think because it builds confidence for those with no drawing experience. So, I suppose it has its place. But it would be my hope that after progressing through the book people will find courage to draw freehand or loosely from observation, because that's when the real learning takes place.

How long do you draw an animal before you can recall it from memory without any reference?

This really depends on how much time you spend actively observing and committing their form/anatomy to memory. It could take years, or it could take months if you work really hard at it. Some people also tend to have a better "visual memory" than others. It could be a similar time-frame to learning a musical instrument, that's just my feeling.
If you're asking about me personally, I have been drawing big cats and horses all my life, confidence visualising new poses from imagination started to develop in my teens.
