Ryugexu — Love Cake Ball

This Cake Ball is Red Velvet Cake with Cream Cheese frosting, white chocolate, and a small amount of red icing.

It was delicious. I've been making them ever since. This one was part of a Valentine's Day gift for ~Erin-Jaganshi19 . She loved them, btw.

I have to share the recipe with you I got from a coworker of my mother's. Even those of you who don't bake/cook could probably do it. I sure as heck don't make desserts lol.

If you make it - please tell me what you think of the recipe. Also please share what flavors you used.

Recipe for Cake Balls

You Need:
Cake Mix (Any flavor you like! Also, whatever the cake mix requires to bake, usually 1/2 cup of vegetable oil, some water, and two eggs). If you make cake from scratch, do it however you do it, baby!
a regular sized 16oz can of frosting (Any flavor you like!)
toothpicks (a pack of 50-100 is preferred)
Those cute little waxpaper cups, found in the baking isle near birthday cake candles (a pack of 50-100 is preferred)
Melting Chocolate Chips (found in the fruit isle. You may need two containers)
Any garnishes you prefer (in my case, I chose icing. Another good idea is sprinkles!)

Directions
Bake the cake as outlined on the back of the cake mix (for those of you who make homemade cakes, just bake it how you normally would!)
After cake is baked and removed from the pan, put it in a VERY LARGE mixing bowl and crumble it up. Let it cool for at least 30 minutes. We don't want the cake to be warmer than air temperature. Some people prefer to cut off the edges of the cake, but I find it makes no difference other than the amount of cake balls it makes.
Take half of the container of frosting (8 ounces) and dump that into the bowl with the cake. It is prefered to have 'slightly less' rather than 'slightly more' when it comes to the frosting. Too much frosting makes it harder to shape later. Mix thoroughly.
Get a tray ready that can fit in your freezer, and set the toothpicks next to you at your workstation.
Scoop out 1 TBSP of cake+frosting mix and roll it into a ball. Stick a toothpick in the center and place that onto the tray. Repeat until your bowl is empty of cake+frosting mix. You may need multiple trays or plates.
Set the tray(s) containing the balls with toothpicks in them into the freezer. Let it freeze for at least 45 minutes or until cold to the touch.
Heat up melting chocolate as directed on the package. I prefer the microwavable melting chips - it's less of a hassle that way for the average joe chef who doesn't have a proper melting pot.
Remove tray(s) from freezer. Carefully lift the balls by the toothpick and dip+roll it in the melted chocolate until mostly covered. Place it in a mini-cupcake wrapper. Repeat until you are out of balls.
After a bit (to insure you don't disturb the hardening chocolate, this really only takes a minute or so since the cold balls re-harden the chocolate easily), remove the toothpicks from your cake balls.
Garnish the top of the cake ball (where the hole from the toothpick was) with an extra drop of melting chocolate and whatever you like. In my case, I drew a heart with icing.
Place cake balls in the fridge - and enjoy this delicious little treat!

This recipe makes between 43-50 cake balls. It's great for parties, pot lucks, or just to have around the house as a nice little treat.

Flavor Recommendations
I've made several batches of cake balls, so I have a few recommendations for the flavors of cake, icing, and melting chips.

Chocolate Cake Mix, Chocolate Icing, and dark chocolate melting chips. (this includes and/or "chocolate fudge" flavor, which is particularly divine)
Red Velvet Cake Mix, Cream Cheese Icing, and white chocolate melting chips
Lemon Cake Mix, Lemon icing, and white chocolate melting chips (a real palette cleanser, for you food critics out there. This one is my favorite)

Oh yes! You should totally make some next time you plan on having guests.

I have some chocolate fudge cake balls in the fridge right now that I plan on taking to my father's house. I hope he likes 'em!

Nope lived here for 22 years, my whole life, and so have my brothers. My mental issues with depression and Obsessive Compulsive Disorder lave me housebound for the most part, and most of the people I went to public school with used me for the most part.

I have depression too, and a few compulsive tenancies. I try my best to fight through it to get what I know is good for me but sometimes it can be tough. You should always do your best~!

It's easy peasy.

Basically, for most of it, you follow directions on the back of a box (the cake mix), then you just mix stuff together smoothly (easy to do), then roll it up into size-controlled balls, freeze it, and heat up some melting chocolate and dip it!
