Ingredients:
300ml milk, 1 teaspoon vanilla pulp, 3 egg yolks, 45g starch, 155g powdered sugar, 750g strawberries, 1 fruit cake base (26cm diameter), 240g soft butter, 150g marzipan paste, red food coloring.
1. Boil 240ml milk with pith. Mix 60ml milk, egg yolks and starch until smooth. Stir into boiling milk with 120g powdered sugar, simmer 1 min. Cover cream with plastic wrap and cool to room temperature.
2. rinse strawberries, drain, clean. Cut some in half for the border. Reduce size of base (24cm diameter). Cover with cake ring. Stir through cream. Stir in butter in pieces. Spread some cream on the cake base. Cover inner edge with strawberries.
3. Place remaining strawberries close together on top. Pipe cream into gaps. Knead marzipan, 35g powdered sugar and food coloring. Roll out run (approx. 24cm diameter). Place on cake, chill for 2 hours. Decorate cake as desired.
Note: Here I put a second layer on top of the cake instead of making a marzipan blanket so the candles wouldn't sink. On top of the cake cover I poured cake icing.
