People are always wishing for a superhero in their lives. Kubo was lucky to have one for his mother; yes, his father was the mighty Hanzo, but he wasn't there to protect Kubo, cure his illnesses, kiss him goodnight, and make him smile for over eleven years.

Lost memories or not, Sariatu would never forgive him for essentially abandoning her and Kubo after the siege of the Beetle Clan castle. Of course, she would likely go after her father first, as it was he who sent the insidious beings, who were formerly her sisters, after them in the first place. And it was they who stole Hanzo's memories.

Actually, in the movie, she did forgive her husband on just that, the basis he didn't know he had a son or wife.
And he didn't abandon them, he sacrificed his life to protect his wife and son.

Judging on the actions of Monkey, it is unlikely she would have forgiven him without giving him a sound thrashing first, verbal or physical. Even still, she does leave guardianship of Kubo to Beetle/Hanzo in light of knowing she has limited time left thanks to the magic running out on the Monkey doll. That must mean something.

That's not the way I interpret it (she constantly praises Hanzo's memory throughout her screentime as Sariatu)

It's touching how Kubo thanks his mother for all that she's done. She may not be able to express it in such words, but Kubo being there is what she's grateful for in return.
