Her colors for her body come from her appearance in 'The Fall of Sunset Shimmer', and is the closest to her canon color we are likely to get. helped me compile and write this, so you should really give him a lot of credit and he's awesome, so, you know, that and all.
Sunset Shimmer's mother passed away due to complications involving her daughter's birth, and Sunset's father worked himself till he was raw in the hoof to keep his newborn daughter happy and healthy. This was to the detriment of his own health, and he himself died when his daughter was barely old enough to speak. So the fiery Unicorn found herself in a Canterlot orphanage, where her magic impressed many a fellow foundling foal. Though Sunset's magic also impressed a good number of potential adoptive parents, so many found her fiery and petulant demeanor a turn-off.
And then Celestia found her, and we get Fall of Sunset Shimmer. Then the Equestria Girls trilogy.
Taking in the powers of the Elements of Harmony from her Canterlot High friends caused a great change within Sunset Shimmer. She was not an Alicorn, but she was not a pony or a human anymore. She was now a seraph, an angel (although that latter term confused her when Fluttershy first used it to describe her Daydream Shimmer form, as Sunset was quite sure that she was not a homicidal statue that froze when stared at).
Sunset Shimmer decided at a certain point after the Friendship Games incident (which led to the bitter resignation of Principal Cinch), that the name Sunset was a something she wanted to leave behind. She wanted to be known for her rise, and not her fall, and finally felt that she had repented enough of her past sins to go by a new name. So, she rechristened herself Sunrise Shimmer.
After taking up her new identity as Sunrise Shimmer, she felt that she had finally merited a reunion with her mentor Princess Celestia, as outraged as the glorious Alicorn was bound to be. She needed a friend to back her up. Taking her gentle friend Fluttershy along as support, she stood before the Princess of the Sun, let her know how deeply sorry she was, and how much she had grown since they'd last been face-to-face.
Sunrise didn't know if she would have been able to stand before Celestia without Fluttershy there. Although the Princess was more than kindly and forgiving, it was more than what Sunrise felt about herself... but on par with Fluttershy's love for Sunrise. Bolstered, she demonstrated her new seraph form, Daydream Shimmer, to show physical proof of the sea-change she had made in her time away from Equestria. As Fluttershy spoke so glowingly of her, Sunrise felt a warmth rising in her heart. She found herself falling in love with her friend... and as it turned out, Fluttershy felt the same.
While they were in Equestria, though, Sunrise found that Fluttershy had become enraptured of the menagerie of animals that lived there. Animals and creatures of all sorts which Sunset had known from foalhood that were only shadows of myth and legend in Fluttershy's human world... Fluttershy insisted upon learning how to tend to these creatures, as she wished to become a veterinarian and care for all sorts of animals.
Quite certain that they wanted to spend the rest of their lives together, Sunrise & Fluttershy moved in together back in the human world, also taking ownership of a small cottage in Equestria which they would vacation to now and then, to satiate Fluttershy's love of the mythical beasts which were now so very real.
After graduating from Canterlot High, Sunrise and the human Twilight Sparkle began to dig into the issues of magic leaking into the human world from Equestria, working as cosmic-level plumbers to plug said leaks and quell any arisings of any raging demons or magical creatures that might rear their heads here or there.
In short time following Fluttershy's acquisition of her vet's license, Sunrise & Fluttershy wed. Her Canterlot High friends served well as bridesmaids, as did the Princess Twilight Sparkle. At the conclusion of the ceremony, Sunrise Shimmer rose up and became Daydream Shimmer, and Fluttershy herself ponied up as well, the pair rising up in their wedding dresses to the awe of those in the pews.
(They held a smaller private ceremony in Equestria as well, for the benefit of Princess Celestia. Princess Twilight's friends were rather perplexed to see an alternate version of one of their own marrying a fellow former pupil of Celestia's.)
Deciding to raise a little family of their own, Sunrise & Fluttershy adopted Mocha Sweet, a cute little girl they'd met at the city orphanage.
And for the first time in a long time, Sunrise Shimmer was content. She had reconciled with her Princess Celestia, she had a circle of friends who loved her, one member of whom was her wife, and she had a new purpose in her life: working with the human Twilight Sparkle to bring under control the Equestrian magic which she had brought into the human world.
And in the meantime, Sunrise Shimmer looked to the day when Fluttershy realized that same-sex Equestrian couples could have biological children with anxiety, and anticipation.
